The House of Paul Jaboulet Aîné is one of the Rhône’s most recognizable wineries. The reputation of Jaboulet wines rests on the quality of the well-situated and well-tended vineyards, on low yields, careful vinification, and diligent aging in oak casks. The Jaboulet family prefers carefully integrated oak aging, in which the influence of wood is never allowed to become excessive. Since this is an important point, they have their own cooper who makes and maintains their stock of barrels.

Cornas Vineyards:
On the right bank of the Rhône, the vineyard is located on the eastern slope of the Massif Central, in the commune of Cornas, near the small chapel of Saint Pierre. The steep hillsides, facing due south, form a natural amphitheater that protects the vines from cold winds. In Celtic, Cornas means 'scorched earth'. The Cornas vineyard, very old, has existed since Antiquity. Its structuring in terraces and the appearance of the first 'chaillées' (low walls) are said to be the work of the Romans. Legend has it that Charlemagne himself, passing through Cornas in 840, tasted this wine, which was so appreciated that he had some shipped to his residence in Aix la Chapelle.
Soil Geology:
Planted on steep hillsides. The soils are thin, acidic sandy-gravelly, derived from granites and saprolites of the primary bedrock.
Winemaking / aging:
Optical and/or manual sorting. Traditional vinification - 100% destemming. 3 weeks of maceration. Gentle extraction (pump over). Aged for 12 months in French oak barrels and demi-muids (with a percentage of new wood varying according to the vintage). Malolactic fermentation.
Known as Some Of The Best Vineyards Of Cornas,
Les Grandes Terrasses is named for the extremely steep terraces supported by small dry stone walls that overlook the Rhône Valley. These parcels on the South-facing slopes of the hill behind the village of Cornas have soil of decomposed granite called gore and produce rich, full-bodied wines. The Syrah vines are 20 to 60 years old.
