Folio Tasting

This wine tasting was a blast! We got to taste a variety of wines from Rhone white to Vintage Champagne.

2022 Animo Sauvignon Blanc 750ml - $60
Tasting Notes: 100% Sauvignon blanc. The bouquet presents floral notes of honeysuckle and citrus blossom, with hints of fresh lemongrass and nectarine; On the palate it is dense, but lively with juicy acidity like fresh white peach and apricot. A lingering finish with hints of vanilla, oak, and chamomile.
2020 M. Chapoutier Hermitage Chante Alouette Blanc 750ml - $130
Tasting Notes: All Marsanne from a mix of both granitic sites and more loess sites, brought up a mix of demi-muids and tank, it has a gorgeous perfume of honeyed peach, quince, crushed stone, and toast. With bright acidity, medium to full body, beautiful mid-palate depth, and a great finish, it will benefit from just a few years of bottle age and keep for 15+ years or more. It’s a quintessential Hermitage Blanc.
NV Piper Heidsieck Blanc de Noir Essentiel 750ml - $80
Tasting Notes: Essentiel Blanc De Noirs Extra Brut is 80% Pinot Noir with the rest Meunier and comes from sustainable grapes. It doesn’t include any reserve wine, so it’s entirely from the 2019 vintage, and moving forward, Boutillat will begin to introduce a new solera to go into this cuvée, coming from 10 different villages across the region. A bright straw hue, the wine opens to a delicate smoky lift with fresh notes of orange citrus, blackberry, and flowers. The palate is pure and fantastic, with distilled black fruit, a fresh, chalky texture, and an elegant, fluffy mouse as well as a well-rounded purity of fruit through the mid-palate.
NV Charles Heidsieck Blanc de Blanc 750ml - $92
Tasting Notes: A bright yellow color, the NV Champagne Blanc De Blancs Brut is also based on the 2018 vintage and also sees 9 grams per liter dosage. From different terrors around the region for Chardonnay, it opens in the glass to more reserved, delicate aromas of citrus pith, white flowers, and a deeper mineral tone underneath. Juicy and full-bodied, it’s more expressive on the palate, with ripe fresh pear and rounded notes with a creamy texture. It’s very attractive, and although it needs some coaxing on opening, it’s a very attractive ripe and juicy style of Blanc De Blancs with the Heidsieck signature. Drink 2023-2030. Disgorged in 2023.
2014 Piper Heidsieck Vintage Brut 750ml - $105
Tasting Notes:  The grapes come mainly from premiers crus villages and the final blend is 55% Pinot Noir and 45% Chardonnay sourced from Verzy, Ambonnay, Tauxières, Montgueux, Avize and Barbonne. Malolactic fermentation was completed (Boutillat was not chef de cave at the time) and the dosage is 7g/L. Disgorgement took place in December 2020. The Piper-Heidsieck 2014 shows an enticing nose, oscillating between pear and peach aromas, that becomes more floral in character with airing, refreshed by minty notes. Spices and flinty notes appear with time in the glass, intertwined by pastry and elegant oxidative notes. The mouthfeel has a juicy yet tense structure, with fresh notes of mint and citrussy acidity that deliver freshness and lift on the flinty texture.
2012 Charles Heidsieck Rose 750ml - $185
Tasting Notes: Fragrant, with wafts of roasted nuts and toasted brioche — a profile that underscores the palate’s flavors of steeped raspberry, peach skin, ground coffee, vanilla and candied mandarin orange peel. Reveals vibrant, well-integrated acidity, which keeps this rich version trim and focused and drives the long, fine-textured finish. Pinot Noir and Chardonnay. Disgorged 2021.
2013 Rare Champagne Millesime 750ml - $210
Tasting Notes: Rare Millesime Brut 2013 is a Champagne of exceptional finesse and elegance. It opens with enchanting aromas of toasted brioche and a touch of orchard fruit. On the palate, it unveils layers of pear and a subtle mineral note. The fine, persistent mousse leads to a long, sophisticated finish. This Champagne is a true celebration of an outstanding vintage and the art of French winemaking.
